Mango Salsa
1 mango (ripe but not too ripe, they are too soft) diced
1/2 cup red onion, finely diced
1 lime, zested and juiced
1 clove garlic, very finely chopped
1 serrano chile, finely chopped
Optional: 1/4 c chopped cilantro
salt and pepper to taste
Add all ingredients and let sit in the fridge overnight to fully develop the flavors.
